Every week WOKV spotlights a new business and this week’s focus is Southern Steer Butcher which opened in February in the Ortega neighborhood.
The shop is run by Chris and Simone Croft and Simone says people are surprised when they come in because, “It’s not your Grandpa’s Butcher Shop.”
Unique to Northeast Florida, this butcher shop has marinated steak tips, using a vacuum tumbling process.
The tumbler holds up to 100 pounds of meat, using a vacuum to pull all the air out of the meat as it’s marinated and tenderized at the same time.
Their most popular flavor for marinates is Argentine, but they also have garlic and herb, Bulgogi Korean Style Bar-B-Q and they can vacuum marinate chicken and pork as well.
Southern Steer Butcher is a full-service butcher, so they can do any cuts on site, and they make their sausage in house, just about every day in several different flavors.
Here is a list of their take-and-bake sides: Smashed potatoes which are elevated mashed potatoes, and it is one of their best sellers, balsamic bacon Brussels Sprouts, rosemary carrots, garlic green beans, buffalo cauliflower, vegetable medley, caprese salad, chicken salad, fish dip and buffalo chicken dip.
Since they offer take and bake sides, it’s a no-brainer that they would offer meal packs and they do something special with those meal packs every week.
They even create meal packs that include up to 5 meals.
One of the projects they do is called Project 52. Every week they ask people in the community to nominate families that might be having a hard time and Southern Steer donates donate one meal pack (up to 5 meals) each week.
